Natural Dried Active Bread Yeast

Natural yeast is a mixture of flour and water that houses an entire ecosystem of beneficial bacteria and micro-organisms that are necessary in the fermentation process that is required in bread-making. During fermentation, these beneficial bacteria breaks down the sugars in the dough mixture and releases carbon dioxide which causes bread to 'rise'. It is similar to sourdough without actually having a sour taste.

Natural yeast lowers the body's glycemic response to carbohydrates, takes away heartburn and acid reflux, helps prevent or reverse gluten intolerance and, in some cases, full-blown Celiac's disease, controls allergies, and turns flour into a yeast that is both pre-biotic and pro-biotic.

Natural Dried Active Bread Yeast does not contain a high level of gluten. It is often mixed with all-purpose flour or bread flour to make breads. It can be a better substitute than white flour in similar proportions, sift the flour a couple of times to incorporate more air into the dough.
